CHOCOLATE BAILEY IRISH CREAM SOUFFLÉ

I love soufflé and here is a nice and easy one:

Ingredients:

4 Egg whites

2 tsp of sugar for white mix

3 Egg Yolks

2/3 cup of sugar for yolk mix

6 oz of chocolate

2 tablespoon of vanilla extract

1 shot of bailey irish cream

1/2 cup milk

Directions:

Preheat oven 375.

In a bowl glass mixing bowl add in your chocolate.  Put the chocolate int he microwave for 1 min.  Then take it out and mix it a bit. The chocolate should be a little melted.  Then put the chocolate in the microwave again for 30 sec and mix it a little more. Do this for 3 -4 more times till the chocolate is completely melted.

In a separate bowl whisk the egg yolk with the 2/3 cup of sugar until it turns pale yellow.

Mix add the yolk mixture in with the chocolate and mix in milk, bailey, and vanilla.

In a Mixer mix the egg whites with the 2 tables spoons of sugar until you see soft peaks.  Im not sure what the best way to tell you I guess I should of took a picture.  But if you turn carefully turn the bowl upside down and the mixture doesn’t drop to the floor it means its ready!

Now carefully fold in the egg white mixture in too the chocolate. Remember to fold it carefully once its folded together leave it don’t over do it for you will break up the egg white and make it less fluffy.

Finally grease the soufflé bowls and coat it with sugar and spoon in the mixture.

Bake for 10 – 15min I would keep an eye on the soufflé a good way to tell that its done is once the surface cracks it should be ready.
